Carrot and Pumpkin Mash
This is a very easy recipe and perhaps the only way I can get my husband to eat a good amount of carrots. It is just an adaption of my mashed potatoes, so let your own inspire you. In this recipe, however I do not use milk. The consistancy will be a little loose since there is no starch (from potatoes) in it. It's a great side dish to a vegetarian meal or meat dish.
per person for a generous serving:
3 medium carrots
equal amount of pumpkin (use any kind but the sweet variety)
a little butter or aromatic oil such as toasted sesame seed or walnut
herbal salt, white pepper
a litte garlic powder
optional: I like to add a light sprinkling of cinnamon and a touch of maple syrup as well.
garnish: chopped chives or mint (especially interesting when using the cinnamon).
Cut the peeled pumpkin into large chunks and the carrots a little smaller. I prefer to steam them together until tender. Drain off the water and save for another dish.
Use a food mill (ricer) or mash into the still hot pan they were steamed in with the butter/oil, salt, pepper and garlic powder. Use a fork to mash if you don't have a food mill. Sprinkle a little cinnamon over the surface and a light drizzle of maple syrup. Stir with a fork.
If the pumpkin has released more water, cook a little over low heat to allow it to evaporate before serving. You can also keep this warm in the oven.
Note: This is one of my favourite side dishes when I serve a vegetarian meal of cabbage wedges braised on browned onion slices with a little broth and cumin seeds, green beans cooked with tomato and onion, and slices of tempeh marinated in a little soy sauce and fresh ginger. Very filling and very good!
