Cucumber Salad with Yoghurt and Mint
Cucumbers and summer go together like the ice in lemonade. Yoghurt and mint are delicious together and combined with the cucumber, guaranteed to keep you cool and refreshed. Ultra easy to make, I just quickly toss together the ingredients adding how much of this or that until it seems just right! Click here for photo.
per 2 servings:
1 cucumber (not overly long)
yoghurt, the best you can locate
fresh mint (about 1 T. or more)
sugar
salt, white pepper
Remove the peel from the cucumber and cut off the ends. Cut lengthwise and remove the seeds. Cut each half into three long strips and dice. Add enough yoghurt to either just bind the cucumbers or to make it as loose as you prefer (I like it somewhere in between.) Add the fresh mint and a grating of white pepper. Add a pinch or two of salt and one of sugar. Toss to distribute and serve garnished, of course, with a mint sprig.
