Lemon, Mustard and Sage Turkey Filets
Another very easy dish, quick and flavourful. My
Pumpkin and Carrot Mash goes well with
this as does Potatoes and Mixed Root Vegetables. As a green vegetable, Peas with Mint
(best if serving the Pumpkin and Carrot Mash) or Green Beans with Mushrooms are tasty
choices!
serves 2 generously
2 turkey filets (or pork) about 1 cm. thick
2 T. lemon juice
3 T. olive oil
1 scant t. Dijon Mustard
1 t. honey
2 T. fresh sage, minced or 1 T. dried
a good pinch or two of cayenne pepper or hot paprika
salt, pepper
Lay the filets between plastic wrap and pound slightly until a little more than 1 cm thick ((+ - 1/2 inch). Lay in a shallow dish.
Make a vinaigrette from the rest of the ingredients (whisk together well) and distribute evenly over the filets. Cover and refrigerate. Allow to marinate at least 30-45 minutes, turning a few times.
Remove from dish and pat dry. Sauté about 1 minute per side in a little hot
butter/olive oil blend.
